乳白色湯頭是主廚用豬大骨精心慢熬8~10小時而成的濃郁,加入新鮮蒜頭是為其增添令人迷醉的香氣,入口後的滑順濃甘在心田激起一圈圈溫柔的漣漪。
如果覺得不夠蒜,還有提供一杯蒜泥汁給大家自由調整喔!我個人蠻喜歡用豚骨湯頭煮蔬菜、海鮮和涮肉吃的,因為會讓肉品吃起來更加滑潤嫩口,蔬菜、海鮮也會帶有些許蒜味和豚骨香。

第一站大家肯定都先衝海鮮區,活蝦水族箱很吸睛耶!這裡的活蝦都是現撈然後急速冷凍後再端到架上,不然活跳跳大家都在地上捉蝦就飽了~🤣

鱸魚肉片會比虱目魚再更滑嫩些,香氣有,比較淡就是了,如果不喜歡魚味重的可以選它。

巴沙魚肉它比較彈且紮實些,魚味比較淡。
另外還有一款鮭魚頭丁,它拿來久煮熬湯會很棒,但我自己本身完全不愛煮熟的鮭魚,不想浪費食材就沒夾了;如若真想吃,會寧願加購幾份魚脂滑潤肉質彈香的鮭魚生魚片,比較合味啦!

玉松梅我超愛!從艾可柏菲時期,每次來用餐都會事先拿幾顆酸酸甜甜的梅子放在桌上備著解膩~
秋刀魚甘露煮吃起來鹹甜入味,我有吃到魚頭的部份,魚骨的部份一咬就酥掉化掉了,不用擔心魚刺問題。

壽司區也有保留下來,有時候突然想吃一兩顆有米飯的壽司換換口味啊!
🚩之前看美食社團底下有人說海鮮的補貨速度似乎…不是讓人很滿意,不過我這天去,用餐期間一直到離開前去巡了幾次都沒有空置的情況,應該是有改善了,不用太擔心享用不到海鮮。

來來來,這裡就要說明平平都是和牛,為什麼日本和牛就不開放給大家吃到飽:
先從牛牛本身說起,在日本只有明治時代以前的原生種,或是與外來品種交配的牛隻才被稱為和牛,主要有黑毛和種、無角和種、褐毛和種、日本短角種,以黑毛和種在市場流通最大,而日本的品牌黑毛和牛約有150種以上,別看品牌種類多,人家每一種品牌牛從肥育地點、飼育方式到宰殺地點可都有嚴格規定,不是隨隨便便養出來的牛都能叫品牌牛嘿!
然後日本的和牛分級制度是很嚴格的!依據「步留等級」和「肉質等級」來進行分級。
步留等級:是在第六和第七條肋骨間劃一刀,觀察、計算除去內臟和皮之後,一頭牛隻可使用的食用肉比例,A為最多C為不佳。
肉質等級:依據肉的光澤、脂肪顏色、油花分布、肉質細緻度…等項目進行分類,每個項目皆有1~5級,若要達到最高等級則必須在所有項目中皆為5級的評分才行。
所以A5便是可食用比例最多且肉質等級所有項目都是5分的牛肉。

臺灣在地小農產地直送的蔬菜也有十多種,並且隨季節不同會更換不同菜色,對於想吃大餐又怕熱量攝取過多的朋友,這區麻煩先直接吃爆!

這個在外面的甜點店一片少說八十或百元起跳吧!這裡可以隨便你吃耶!炙燒微焦的蛋白霜擠花,底下是清酸檸檬醬,下一層則是巧克力醬一口咬下,檸檬酸度被清爽的蛋白霜與巧克力結合包裏後,變得比較柔和不突兀,但檸檬香氣還在,是很有韻味與深度的一款糕點。

那麼澳洲和牛呢?澳洲和牛是全血和牛與不同品種的牛進行雜交,在第四層的雜交後所生出來的牛隻具有93.75%和牛遺傳血統,這種和牛才會被稱為純種和牛,而估計只有大約5%才是珍貴的全血和牛,其他大約95%的澳洲和牛均為純種和牛與安格斯或其他牛種的雜交品種,也就是說我們能夠吃到的基本上就是這95%,看到這裡是不是已高下立判?我是說價格…😂

上了二樓,若有事先預約訂位,就要先到這個櫃檯報到等服務人員帶位,現場登記候位也是在此處。

這次來用餐我覺得…就是木櫃工廠火鍋加艾可柏菲自助吧啊!!😍
菜色有比從前豐富很多,且會不定時更換菜品,每次來用餐都能吃到不一樣的品項,雖說有兩個小時的用餐限制,但依舊可以吃得很飽很巧很多樣化,不管是商務、家庭、朋友聚會、過節、慶生…等等,都很適合來此用餐,然後這天來用餐時也有看到一些單獨來用餐的客人,所以來木櫃工廠創意鍋物吃到飽不必呼朋引伴,自己一個人也可以吃得很自在!
