這家於2017年被選為臺灣滷肉飯節嚴選店家的卡滋爾,以鬼頭刀料理聞名,不少電視節目都來報導過。
為了幫助母親走出喪夫之痛而開的店面,店名是以父親的日本名字Katzer命名。
因其父本是漁民,為了家計把賣相不好的魚交給家中女性,透過醃漬、熏烤或日曬,製成可長期保存的魚干、魚醬,最初便是為了分享從小吃到大、傳承了4代的家傳美食,後來研發出魚干滷肉飯、魚干肉綜、魚羹…等招牌古早味鬼頭刀料理,使得母親不但獲得分享美食的喜悅,更打響了家傳美食的名號!

成功漁港又名新港漁港,與富岡漁港同為臺灣東海岸近海漁業的重要基地,屬於臺灣的第二級漁港,以柴魚、旗魚、鬼頭刀及新鮮海產聞名。
走進船形新港漁業大樓,這裡是東部規模最大的漁獲集中地,附近不少餐廳都會來這裡挑選新鮮漁獲,亦設有熟食區可以代客料理,除此之外它還是個休閒漁港,可以載客出海賞鯨豚呢!

鬼頭刀
又名鱪魚,是分佈在3大洋的表層洄游性魚種,且在魚類之中算是少有的一夫一妻制,公魚發現食物時總會禮讓給母魚先吃,就算母魚被補獲,公魚仍形影不離(一個買一送一的概念…),甚至會在船邊繞游兩、三圈後才離去,非常浪漫專情。

哇!這一幕可不能被我們家小姑娘看到,她愛鯊魚入骨,每次去海生館一定要在能看到鯊魚的缸前駐足許久才走,離開前還要買一隻鯊魚娃娃回家,真要讓她看到這畫面,可要傷心死了!!

曼波魚
生活在溫帶及熱帶區的翻車魚,主食是水母,屬於大型大洋性魚類,喜歡側翻在海面上做日光浴,目前被世界自然保護聯盟列入瀕危物種紅色名錄,但華盛頓公約還沒有,雖然如此,但…還是能不吃就不吃吧…。

離開漁業大樓,往船頭走便是一整排的代客料理、加工、零售攤販,這裡一樣可以買到非常新鮮的海產,生魚片、曬乾的魷魚、乾貨、醃漬品、各式現流海產…等等。

再往前走一點的阿珠平價海鮮餐飲,除了代客料理之外,他們專賣旗魚心臟、眼睛、尾巴、牙齦…等常人不要的部位料理,而膠質非常豐富的海豬腳(旗魚尾巴)便是其中最出名的特色料理之一,有機會可以來這裡吃看看。

鹹鹹的海風吹過,聽著浪潮拍打著石岸,堤防上彩繪了好多樣式的魚類,鬼頭刀、劍旗魚、雨傘旗魚、鮪魚、鯨豚、鯊魚…等,你能認出多少呢?

成功海洋環境教室前,還有可以鏢旗魚的鏢魚台,上去試過之後,才懂得用生命拚搏來的食物之珍貴!
其實成功碼頭裡的不少漁船前端都有裝設鏢魚台,但並非有裝設的船家就會鏢旗魚,這項技術算是快失傳了吧!
鏢旗魚手養成不易,這工作是必需拿命相摶的,因其骨折受傷、或葬身於大海的鏢旗魚手不在少數,風險相當大!現役鏢旗魚手多在60~70歲居多,年輕一輩已很少人願意承接這高風險的技術了…。
想要成功鏢得漁獲,除了搭漁船出海須具備合格船員證,接著必需得耐得住漫長等待與惡劣天氣,畢竟得需要冷冽刺骨的東北季風,再加上6~8級浪濤,才是最適合鏢旗魚的日子,水清則無魚啊!

另一側則是旗魚種類與介紹,劍旗魚、立翅旗魚、雨傘旗魚、紅肉旗魚、黑皮旗魚、小旗魚…等,都是台灣東部海域常見的旗魚種類。
新港漁港從日據時期開始,旗魚便是此地區主要的漁獲,牠屬於大洋洄游性魚種,分佈於熱帶與溫帶海域,其長而尖的長喙外型,且游動時尾鰭或背鰭常露出水面而被稱為旗魚。
導覽員手上拿的是鏢旗魚的標槍。

走進店裡,老闆正在製作傳統客家麻糬。
使用花東縱谷圓糯米所做的麻糬,再加上磨得很細,吃了不太會脹氣不舒服,Q軟得像壓力球,揉捏起來特別療癒紓壓。

白白胖胖的麻糬躺在北港花生粉上,店家使用的花生粉並沒有磨得很細碎,還帶有稍大顆些的花生碎,糖粉也是那種顆粒比較大,而不是白色粉末狀的精製糖粉,所以它其實不會太過甜,且帶爽口花生清香。

使用舊米製作的客家麻糬不但延展性高,且柔軟不黏牙,沾裹上花生糖粉,使得本身並無特別味道的麻糬多了甜甜花生香。

水粄碗粿($25)
看似普通,但這跟我們平常吃到的碗粿很不一樣,它是使用在來米舊米所做,不過水放比較少,磨好的米漿與醃蘿蔔乾混合,倒入保溫又透氣的陶碗後,再加入豬肉炊熟。

草籽粿($20)
這裡的草籽粿比起一般草籽粿要來得更綠一些,因其使用自家栽種的艾草,在它未開花前採摘,經過洗→煮→曬乾→急速冷凍…等傳承多年的特殊技法,並加重艾草比例,將香氣及那一抹青綠全部保留下來。
它一入口是非常輕盈剔透的艾草微香,然後越嚼味道越重,可那香氣並不霸道逼人,而是緩緩的、一步步的加重,讓味蕾去習慣。
中間使用台灣白蘿蔔做的內餡,蘿蔔絲切得較粗也較多汁,整體吃起來艾草香中又帶蘿蔔香氣,非常古早味!

鹿野梅花豬
使用豬頸肉煎烤後的梅花豬,不論是肥肉或瘦肉都十分脆口;醬汁是用鰻魚骨在陽光下曝曬十日,然後磨成粉再熬成如此清甜濃稠的醬汁,當梅花豬沾裹其上,濃郁醬香中仍可嘗到豬肉本身馨香。
