雖說招牌寫著燉鴨湯,但他們家最熱門的還是老闆自己研發的白鍋雞湯,

可別看它小小一家不起眼店面,他們可是三民百大美食TOP10之一,
嚴選上好食材、耗時耗力精心燉煮的湯品,
即使已是晚上九點、十點之後,
還是有不少剛下班或附近居民來這裡買宵夜,
有時從娘家回來,半路肚子餓了,也會順道來這兒吃,
除了好吃,價格也非常親民喔!

它,是店裡的招牌,是老闆自己研發調配的,
雪白雞湯,熬燉過程卻十分繁雜,
特選土雞與中藥材一同熬煮一段時間,將舊藥材倒掉,
再放新的中藥材和土雞下去燉第二次,
等土雞肉燉到軟爛了要先撈起來,吃著才不柴,然後再接著繼續熬,
火侯與時間都要控制到精準,才能成就這一盅盅醇厚雞湯啊!

老闆堅持使用土雞而非肉雞,
所以雞皮滑軟肉質彈嫩不柴,口感極好,

一直以為九尾雞是某種雞的品種,
今天才知道所謂的九尾雞,其實是用九尾草為主要藥材下去製作的料理,
我第一次吃,但九尾草清香第一口就深深印在我的心裡,
我沒想到雞湯竟然可以跳脫濃郁轉變成清新,
滋味剔透卻仍保有實實在在的雞香,非常特別!

九尾草清香入了口,然後雞香甜味緩緩跟上,
蛤蠣提了整碗湯的鮮,味道上的變化具有層次,
土雞肉是入味的,不會讓人覺得湯是湯、肉是肉,
喝起來協調、爽朗。

一般喝香菇雞湯,那香菇的味道其實並不清晰,
但它這一喝,巴西蘑菇獨特香味不僅融入湯中,
滋味兒亦特別明朗,如漫步在雨後山林間、聞著濕潤木頭香的感覺;
鴨肉是老闆每天早早趕在第一批鴨子送到市場時就去選了的,
憑藉著多年廚師的經驗與執著,
凍過的、泡過水的鴨子通通不要,非新鮮的不買,
即便我吃的是鴨胸部分,依舊彈嫩不柴,而且味道都有入進去,
吃著舒心哪!

而且滷的非常入味,有醬油與藥材的微甜清香,
維持一定肥瘦比例的豬蹄膀吃來並不怎麼油,
重點是沒有豬腥味,下飯好吃不膩口!
不過…放冷了會變硬,一定要趁熱吃,

麻辣肉燥香氣,加上皮蛋獨特濃香,
搭配起來的口感簡直…只有濃郁香辣可以形容了!

也有幾樣燙青菜可選,蔬菜洗得很乾淨,
上頭淋的肉燥頗為鹹香,為簡單的燙青菜增色不少。

打卡有送,單買也只要30元,
麻而不辣的鴨血滑Q軟嫩又入味,
麻辣味是有層次的,吃的出花椒清香,
因為之前待過麻辣燙店,
所以就覺著這花椒香氣跟我所認知的香味不太一樣,
比較颯爽剔透些,醬汁拌飯超香超好吃!
老闆說他用的是比一般紅皮花椒等級要高些的雲南青花椒,
比較沒那麼麻,但營養價值卻比紅花椒更高喔~

店裡十多道湯品,除了腦髓我不敢吃所以無從評論,
但其他湯品都有它們自己非常突出的特色,
你從它們那可區別的香氣上就能知道老闆對料理用心之深,
而那滑口雞皮、彈嫩土雞肉、紮實而不柴的鴨肉,
便能透露老闆選擇食材的專業與堅持。
老闆很好聊,尤其談到料理時,
