中秋節,除了烤肉賞月,大家還會做什麼呢?
今年打算跟黑心小喵待在家做月餅,
自己做,不但可以減少糖量、
自由搭配內餡滿足全家大小不同的味蕾,
主要是不會有任何對身體不好的添加物,
吃起來絕對安全與安心。
當然啦!事先的備料還是得先蒸好煮好才能開始玩嘛~
先來看看需要準備什麼工具與材料吧!
※本食譜使用50克月餅模,約可做17顆月餅。
所需工具:
篩網、刮刀、刮板、刷子、
1斤透明袋、保鮮膜、50克月餅模。
冰皮材料:(完成後的冰皮約425克)
糯米粉50克 糖粉50克
煉奶30克 植物油30克
無糖可可粉4湯匙(若要做雙色就減半)
沾米粉(蓬來or在來米粉)50克
澄粉(無筋麵粉)30克
牛奶230克
手粉:
糯米粉30克
餡料:(完成後的餡料約425克)
開邊綠豆115克
糖粉40克 澄粉6克
可可粉4湯匙(若要做兩種口味就減半)
煉乳15克(若要做兩種口味就減半)
巧克力流心:
煉奶2湯匙
可可粉3湯匙

我們先來做冰皮的部份,先燒一鍋熱水備用。

再把牛奶倒入充份混合至沒有結塊。

只要將碗稍微傾斜,像在打蛋一樣攪打,
就能順利將油與麵糊混合在一起,
當表面看不到植物油,就表示已經混合完成囉~

確保沒有結塊,做好的冰皮也會比較細緻,
選擇淺盤,等蒸好會比較快放到溫涼。
篩網在選購時,可以買照片裡這種,
既能篩粉類、麵糊,
之後在做內餡時,也能用壓篩的方式,讓內餡更細緻。

在蒸的時候,放支筷子架起鍋蓋,
這樣才不會讓太多的水份跑進麵糊裡,導致麵糊太黏。

但沒關係,因為之後我們會把它揉回進麵糰裡。

趁熱,用刮刀把邊緣的麵糰鏟起來,
減少消耗,之後也會比較好清洗。

把油完全揉進麵糰,直到表面不會有明顯油光。
冰皮的口感是否細膩,取決於我們揉麵糰時間的長短,
揉得越久,口感就越細緻,記得戴上手套才不會黏手。

紫色是用紫地瓜粉(熟粉),另一色則是用可可粉。
拿一個1斤透明袋,把麵糰和粉都倒進去後用橡皮筋封口,
直接在裡頭揉捏至均勻上色,麵糰表面也沒有顆粒就可以了。
而且,這樣也可以放心交給小朋友來玩,
也不用擔心粉會撒得滿地都是喔~

把糯米粉倒入不沾鍋裡,以中火炒到微微發黃就好了。
不要炒焦,焦了沾在月餅上就不好看了,味道也會變得很奇怪…
※記得!在倒粉類時,離火源處遠一點才不會發生危險!

然後把保鮮膜收口捲成球狀放進冷凍庫凍硬備用。

一份加入可可粉揉勻上色後再加入煉乳揉勻,
上色方式跟冰皮是一樣的,可以交給小朋友來操做。

那內餡就要扣除流心重量,
比如流心5克,內餡就要秤20克這樣,
總之,內餡可以少,但一定不能多,
因為外層還要再包上冰皮,
內餡秤多,在包的時候皮容易破不說,
在壓模時一定會爆餡的!

取出後再稍微揉捏一下就可以切割、秤量25克搓成球狀,
因為我的模具是50克,所以冰皮與內餡加起來不能超過50克,
就看自家模具的克數是多少,自行去調整囉~

然後按壓成型,冰皮月餅就完成啦!

密封保存放至冷藏個幾小時之後再吃最好,
要是吃不完就放冷凍,吃之前先解凍,冰皮一樣Q軟喲~
但記得不管冰哪裡都一樣要密封保存,
冰皮才不會被冰箱吸乾水份而變得乾硬嘿!
