今年父親節,我們選擇在久田日本料理用餐,雖是朋友開的店,但也已經好久沒去捧場了,想念那切得肥厚的生魚片、新鮮又大顆的蛤蠣湯、細緻有彈性帶甜甜醬香的肥美烤鰻魚…食材新鮮不在話下,但最令人念念不忘的還是那二十多年師傅的好手藝!
難得吃晚餐就卯起來好好吃一頓,減肥?明天再說吧!

店內沒有固定菜單和價位,所以不像現代新式日本料理店或居酒屋有固定價目表,想吃什麼除了直接點白板上的既定菜色,亦可請師傅推薦、稍微討論搭配或詢問烹調方式、菜色內容、價格如何…等等,總之點餐方式挺需要來回互動的。
所以來這裡用餐,第一要件就是得敢說敢問,別看老闆和闆娘都默默在做事就擔心人家會不耐煩你問很多,其實每桌來用餐的客人都一樣會問東問西,問著問著就直接聊起來的也大有人在,有些熟客還會抓準時機跟老闆聊點有的沒的,所以別怕尷尬,因為你會問的問題20多年來大家都問過啊!
雖然說我第一次自己一個人帶小孩來用餐時,也是覺得很尷尬不敢問多尤其是價格,不知道耶反正心裡就一個疙瘩,所以點的東西都很保守,後來跟老闆混熟再問起這個問題…結果就真TMD是自己想太多…哈哈!

這道菜算是店裡的招牌,基本上也是每桌必點菜色,它不是塗了滿滿甜鹹醬汁的蒲燒鰻魚,而是真正現烤的烤鰻魚。
刷上特調醬汁並撒上白芝麻的表面,吃起來有許焦香,鰻魚肉質細緻有彈性,最底下有一層筋膜(?)則烤得非常香酥,油脂不是豐厚的那種,所以它吃起來不會膩且口感頗具層次,雖然表面有醬汁,但那也僅僅只是添點味道,並不掩蓋鰻魚原本的清香,擠上一點檸檬汁,多了清酸果香氣,滋味輕盈不單調。

這是…好朋友特別版,正常版本是八片大塊厚切生魚片,有鮪魚、鮭魚和旗魚三種。
我很不喜歡吃煮熟的魚耶,頂多就是煮成了魚湯的魚會吃,不然就是這種虱目魚肚漿,就覺得…熟的魚吃起來好沒活力好沒勁兒,沒那種鮮活感,所以只要有機會吃生魚片,都會好開心!

鮪魚的肉質雖然不如鮭魚肉那般有凍感,但清透冷艷的氣息,在鮭魚之後做一個味道上的轉化,才不會越吃越膩。
旗魚雖說味道較淡,不過沾上日式淡醬油後,讓醬油去引出藏在肉裡的清甜,倒也不至於毫無特色。

這道也是必點菜色之二,厚實豬排先用肉錘先捶打,把肌原纖維、結締組織打碎,才不會讓肌纖維在加熱後收縮使肉質變硬,接著沾上蛋液鎖住肉汁,最後裏上麵包粉下鍋油炸。
金黃酥脆的麵衣帶有麵包粉的麵包香氣,原塊未調味的厚實豬排,可以吃到肉的脆Q口感與豬肉馨香,並且保有少許肉汁,沾裹酸甜番茄醬就很日式,若是沾酸黃瓜黃芥末醬,就轉變成豐厚的異國風味。

它算是比較重口味的熱炒料理,它吃起來超級脆口沒有土腥味,九層塔濃烈香氣伴隨在側,加上豆豉醬的濃香,與點點辣椒辛口感點綴,下酒又下飯很臺灣味~

這道菜有分勾芡與不勾芡兩種,我們今天選的是勾芡版。
老闆選的中卷大隻又肥厚,而且切得好大塊,吃起來脆Q有著大火快炒的微焦鍋氣,薄芡汁酸甜帶一點點微辣,整體十分爽口,卻不會掩蓋中卷本身所帶有的清新甘甜味,是我個人非常喜歡的一道菜~

烏龍麵條是用Q彈有嚼勁的讚岐烏龍麵,所以麵條不會有很沉重的麵粉味,炒進洋蔥、魚粄、肉絲、高麗菜、大陸妹、紅蘿蔔,口感鮮甜豐富,很有飽足感。

不喝酒的朋友,也可以到外面的農家堡鮮果汁點飲料來喝,但是垃圾要記得自己帶走嘿!
除此之外,炒牛肉系列也是店裡人氣菜色,不敢吃炒螺肉的朋友可以點這個。
蛤湯也很推薦,店裡選用的是大顆的蛤蠣,多汁飽滿乾淨不含沙,十分鮮美。
