母親節大家都去哪裡過呢?我們家提早了兩天,跑到新光三越彩虹市集裡的拉瑪右手去吃泰式咖哩丼,泰式咖哩結合日式意象,尤其是CNN票選全球50大美食之中第10名的瑪莎曼咖哩(Massaman curry),勾起了我的好奇心,看了格友的介紹,便決定去吃看看,順便逛逛改裝過的彩虹市集。

牛肉是選用USDA Choice特選級霜降牛,咀嚼時,牛肉香氣在嘴裡蔓延,接著是瑪莎曼咖哩濃郁清晰的香辣蔓延至喉嚨,豐厚椰漿把炒在裡頭的乾性香料香氣做完美結合,使得整體吃來香中又帶層次感,卻不破壞香料的清晰香氣,依舊是齒頰留香,即使辣也辣得溫順不刺激,不愧為泰國咖哩之首,CNN票選2017年全球50大美食中的第10名,應該算實至名歸吧!
瑪莎曼咖哩,結合了泰國本地的溼性香料(蒜、香茅、薑…),與印回地區的乾性香料(丁香、肉桂、荳蔻…),是超過20種以上配方的咖哩醬,烹調起來較為費工費時,但相較於單純的紅、綠咖哩,它的風味更為獨特,推薦大家可以試試喔~

外皮金黃酥脆,吃起來口感厚實有嚼勁且帶些許微甜肉汁,泰式檸檬蛋黃醬為其添加一縷清新香氣,不知道是否最近在減肥吃得較清淡,覺得醬汁甜度偏高,即使搭配底下的白飯,吃到一半仍會覺得有些膩口,希望可以做調整,不然這道還蠻不錯吃的。
米飯是使用台灣在地優質品種,吃起來有Q度,不軟爛。
後面的裝飾是酥炸金針菇,保留了金針菇的Q脆,沾點醬料吃會比較好吃。

相較於馬莎曼咖哩又更為醇厚,辣度也更為溫馴,你會先吃到咖哩的香甜,然後辣感才慢慢從中萌出;

紅咖哩以辣椒為主,其他香料為輔,但因為做成了焗烤飯,醬汁滲入米飯之中,所以辣度變得比較不刺激,裡頭加了檸檬葉,吃到時會散出獨特清香,不用擔心沒味道;
熱騰騰的焗烤起司可以牽起很長很漂亮的絲,濃郁起司奶香結合紅咖哩,滋味柔和了許多。

爽脆豆芽菜的味道較為突出,淋上打拋肉,多了豬肉香與微辣刺激感,稍微油了點,不然還蠻開胃的。
柚香白玉
以柚子醬醃漬的脆口白蘿蔔,帶著蘿蔔淡辣與淡淡柚子清香,吃起來非常清新爽口。
