一走進老余牛肉麵館就能聞到燉牛肉的香氣,軟嫩香滑的牛肉、柔軟微韌的滷鴨翅、料多繽紛的酸辣麵…從前常吃的麵食,即便已經傳到第二代,那記憶中的熟悉味道,仍在!

還記得第一代老闆和老闆娘一個煮麵、一個切滷味和端菜的身影,每次和家人一起去用餐,都會很驚異爸爸那可怕的大食量,後來慢慢由第二代接手,依舊是由年輕老闆娘煮麵、老闆切滷味和端菜;
我總是很欣賞兩位闆娘工作時的認真神情,所以很喜歡站在台前看她們煮麵,聞著燉牛肉的香氣或是鴨肉湯的香味;更佩服她們兩位那可怕的心算速度和記憶力,每張單子的客人點了什麼、坐在什麼位置、或是外帶客人幾點來拿點了什麼東西價格是多少,要加什麼不加什麼幾乎都能精準無誤對出來。
在這裡,我吃的不單是美食,亦是那刻劃在腦海中的兒時回憶。

褐黃色的湯頭比較偏向清燉,喝起來十分清甜甘口,三大塊牛肉則是較為重味些的紅燒,柔軟多汁並帶有藥材香氣,牛筋也燉到有黏黏QQ的膠質感,清燉湯頭加紅燒牛肉,這組合雖然有點跳,但還是很不錯吃的。
我記得以前牛肉麵的湯頭,是比較重口味且有藥材香味的紅燒湯耶…

跟一般那種加了醬油的滷鴨翅非常不同,雖然看起來白白的好像沒滷透,但其實它的肉質已經滷到非常柔軟並略帶一點點的韌,吃起來很入味卻又沒有很重的滷汁鹹甜,不會去掩蓋到食材本來的味道,更能說明使用的食材新鮮度很夠,很優秀啊!!

是軟軟彈彈的口感,而且咀嚼時會覺得滿滿黏稠膠質扒附在整個舌齒之間,沾裹甜甜醬油膏和蒜泥,再夾上一些青蔥,蒜香與青蔥清香,為其添進爽口辛香味。

簡單清爽的鴨肉冬粉是小時候最常點的麵食,四片鴨肉片平鋪在透明冬粉上,然後擱些冬菜、薑絲,和一點調味品,吃之前記得先攪拌均勻,
而且那很適合外帶,因為放一段時間讓冬菜味道溶入湯中,吃起來就像在吃冬菜鴨肉湯。
