國民市場裡羹湯很有名的阿明師魚翅羹?
這家店便是阿明師兒子開的烤鴨店,
傳承了總舖師父親的真功夫,
不用擔心吃到被灌風、皮脆肉不甜又老的鴨肉,
選料與製作都非常實在!

實在太久沒吃烤鴨了,所以就點了這一組,
老闆說,他們選用的是三斤重的母鴨,
因為母鴨的肉質較公鴨細緻、軟嫩、肥厚、香甜,
尤其以冬天的鴨子最漂亮最好吃,
母鴨適合做烤鴨切盤,
公鴨肉硬,適合做薑母鴨這種需長時間燉煮的料理,
這是今天在用餐時巧遇阿明師本人告訴我們的,

說是炒骨,但其實還是能吃到不少肉,
這炒骨一送上桌,熱氣蒸騰還帶誘人噴香,
而且味道下飯卻不過於鹹膩,
可以說每一口滋味都恰如其分,
鴨肉非常好咬,帶一點韌性,醬汁甜鹹適中,
九層塔香氣縈繞於嘴間,一碗飯,一定不夠!!!
另外,想吃淡一些、或重口味,
在點餐時可以先說,師傅會幫忙做調整喔~

總之,阿明師烤鴨,不論是片鴨還炒骨,
味道都讓我們十分滿意!

鴨掌非常入味爽口,加上辣椒的微辛辣,
既提出了整體的香氣,酸甜帶辣非常開胃!
這道沒在菜單上,想吃可以先問看看有沒有喔!
別小看這小小一盤涼拌菜,
老闆說,這鴨掌是手工把裡面的骨頭挑乾淨了,
才開始洗淨醃漬,一醃就是得等一天半到兩天的時間入味,
然後才能端上桌,否則厚的地方入不了味,
吃起來的口感也就不對了!
小小一盤,卻是非常費力費時的料理啊!
