今天跑來Le Rice米昂義法創作料理吃飯,
【現已搬遷至夢時代對面,並更名為La Rice米昂小飯廳,文末有地址。】
本來以為這種法式料理價格少說都要NT.1000以上,
但看了菜單之後,其實也還好耶~NT.200~NT.760間,
偶而想浪漫一下的小資族也能負擔得起,
在高雄,Pasadena算是很有名的法式餐廳了吧?
他們的一客主餐,要價可是NT.1800起跳啊!!
這樣一比,米昂真的便宜很多對吧對吧對吧!!!
雖然在這裡無法吃到高級的松露、龍蝦…等食材,
但留法歸國的台灣主廚,將烹調步驟繁複的法國菜餚,
結合台灣在地新鮮食材,以平實的價格做呈現,
這可是手藝、技術與主廚巧思的挑戰啊!

這是一道法國南部的料理,米昂的鴨腿使用來自宜蘭的豪野鴨,
一上桌就有想把鴨腿直接拿起來啃的衝動~~
好奇所謂的油封到底是啥?就查了一下:
大概就是先榨出鴨油,把鴨腿完全浸泡在鴨油中,以小火低溫燉煮約2小時後,利用油脂低溫凝固的特性,將鴨腿隔離空氣、細菌的密封起來,要食用時再將鴨腿取出,鴨皮煎到金黃即可上桌。
所以算是以前沒有冰箱時的人們保存食物的方法吧!
(麻煩死了!還是花錢到餐廳吃,省時省力…還不用洗油膩膩的鍋具…
鴨腿肉質吃起來紮實不柴澀,但鴨皮的部份可能是因為我拍照放得太久,
又邊吃邊寫筆記,耗費太多時間,
所以就變得軟軟的吃不到該有的酥脆口感了…
料理還是得送上來就吃,才能吃到該有的水準啊啊啊啊!!!

一般正宗燉飯,米粒大約是在六、七成熟軟硬度,
也就是說,這樣的燉飯吃起來比較有嚼勁,
如果喜歡比較熟軟口感的話,只要在點餐時告知服務人員,主廚便會做調整。
今天選擇的是義大利小米做成的燉飯,
因為沒有事先與店員溝通軟硬度,
所以吃到的是比較偏台灣人喜好、熟軟、Q度偏低些的燉飯,
下次去一定要先跟店員說好,不然這樣的米飯,喵娜我不是很愛…
撇除軟硬度不說,這燉飯每粒米都包裏著奶香白醬,綿密香濃,
還帶新鮮蔬菜所熬煮的高湯的甘甜,讓我意猶未盡啊!

最上頭是烤得香酥的香蒜麵包塊,湯裡蔬菜量不少,
喝起來有沙沙的口感,應該是把馬鈴薯磨泥再和大量蔬菜下去熬煮,
有著濃郁奶油蔬菜的甜香。

裡頭有穀物顆粒,邊咀嚼,淡淡麥香在嘴裡散出,

這一盤好豐盛喔,煎煮炒炸燉都有,
送上來時,底下的白色烤盤是會燙手的,
服務生一直提醒我要小心,不要被燙到、在烤盤冷掉前要快點把牛排吃掉,
好,我決定實驗一下這烤盤到底多燙要服務人員一直提醒,
嗯~只有一句,請乖乖聽服務生的話!!XDD
這真的很燙耶!碰到手一定會立刻縮回來,還帶著刺痛感的啊!!
而且到我拍完照吃完,烤盤還溫溫的,看它保溫效果多好,
一整餐下來食物都還是溫熱溫熱的,口感保持在一定水準之上!

豪邁的大口咬下,胡椒與海鹽、和著Q軟不膩口的脂肪與香甜肉汁在嘴裡噴發,

這番茄本身非常的甜,主廚再以義式乾香草香料下去烤過,
